They challenge the notion that Indian haute cuisine can only be created using age old recipes and ideas, believing that Indian food should constantly evolve and adapt. The team create dishes and menus combining Indian ingredients with local produce and Indian cooking techniques, with a European influence that produces a distinctive layering of flavours.
All their main ingredients are delivered straight from the market on a daily basis to ensure only the freshest, locally sourced ingredients reach your table. To make their dishes and sauces as low fat and healthy as possible, they do not use ‘Ghee’, which is high in fat and the chicken is steam cooked or grilled. Café India’s Executive Chef Bablu Roderick has worked in first class hotels and restaurants across India, Bahrain and the UK. Head Chef Rashid Ahmed has over 22 years experience including the position of personal chef to the Prime Minister of Pakistan.
